Quick Question re: Grilled Cheese

Does anyone know the perfect way to cook a grilled cheese sandwich that will toast the bread without burning it and melt the cheese all the way through? It seems like there is a delicate line between too little and too much heat.

we use a big griddle that you would cook a ton of pancakes on. Lots of butter and slow cookin' on 250-300 - flip often....
